Default Coconut butter

I recently was shopping at Big Lots, where they have random food, usually off-the-wall and gourmet stuff, and I found coconut butter. I bought a jar and it's so yummy I have to go see if they have any more. All there is in there is coconut. It is perfect for a fat fast, as each 2T has 210 calories, 21 g fat, 3 g net carbs, and only 2 g of protein. I did the cream cheese fat fast yesterday, and the egg and butter fast today, but tomorrow I am going to try using coconut butter. It's hard to believe it is so tasty and so good for you.

I wonder what exactly coconut butter is? and it's easier to eat straight that coconut oil (which makes me a little gaggy)?

Looks like coconut butter and creamed coconut are the same thing. Basically what you'd get if you pureed coconut flesh until smooshy.

You can get coconut cream in bar form at most reasonable supermarkets here. Often in the baking section, but sometimes you'll have to look in the ethnic sections. It can be a bit cheaper when it's being sold as a traditional food commodity rather than as a superfood.

I use a local "ethnic" (whatever that means) large super store to get most of my food and spices. Basil is one that comes to mind that is super expensive at a "regular" store...



Good find on the coconut butter, I'll keep an eye out. I do enjoy coconut!

Maybe try making my own this weekend or next time I get some fresh coconuts. Spread it on healthy whole grain breads, likely not but one never knows...

thanks! I've seen "creamed coconut" but not the butter, so this helps! :-)
