When I make it I add 1 TBSP of coconut flour (less carbs than almond flour and more fiber). It comes out like yellow cake. Then I top it with real strawberries that I have cooked in about 1/4 cup of Da Vinci Vanilla syrup and 1/2 tsp of vanilla extract (no sugar added). The topping with the syrup created by the strawberries makes a delicious dessert or breakfast.

Sadlady - are you adding the coconut flour to the basic recipe? I OD'd on mock danish when I started and would love to try this new version that is like "yellow cake"!
Yes, BetsyJ64, I add it to the basic recipe. The coconut flour has a mild flavor. I don't particular like coconut and I can deal with the coconut flour OK.
Oh wow! I just read this recipe half hour ago and just HAD to try it! I used
1 medium egg,
2 oz cream cheese,
3 tsp splenda,
and a dash each of lemon and vanilla essence.
Nuked in microwave for about 2 mins, stirring every so often.
I thought it was gorgeous! And enough for 2 portions definately! Cant wait to try it with other flavours now!
I bought some pumpkin pie spice mix this morning at the store (I found a store with bulk spices, so I scored this mix for 2.98/pound instead of the 4.00 for a itty bitty jar last time I bought it.).
I wanted to retry the mock danish and instead of the other spices a did a good sized dash of the pumpkin spice. Boy was that good!!
I made my mock danish a different way tonight - the danish has become my nightly snack just before bed.
Tonight I added peanut butter, a tbsp or so, and my usual pumpkin pie spice mix. Came out much thicker almost bread or cake like. The peanut butter added a creaminess that I haven't had before. The peanut butter was natural. I found a store that will let me grind my own. Also I use 2 eggs instead of one.
I have one for breakfast on the weekends. I only cook mine at 50% power for 1.5mins. Still light and fluffy but done.
Yummy. It's so good with butter on top.
Wow, I really like the idea of the coconut flour and also the pumpkin pie spice. I may have to give this a try again. I abandoned it for rev-roll based desserts.

This was very good and yummy.
I don't have a microwave, so I sort of cooked it on the stove in a non-stick pan like an omelette. Looked like strange scrambled eggs, but tasted divine. I may try sprinkling in a bit of flax meal or almond meal to give it more body.
