I'm a day early but I don't want to forget to start this!

Salad a Day Challenge for June

A salad can be anything you deem it to be.
Fruit, vegetables, meat salads, whatever combo or incarnation you call a salad.

Try to have at least 1 serving of salad a day, any meal.

Post your meal here, or the entire days menu, whichever you choose.

Share any interesting salad dishes you find.

My salad this morning...

small tomato, 1/2 avocado topped with 2T sour cream and 2T full fat plain greek yogurt, 2tsp apple cider vinegar, topped with cinnamon and turmeric, 1T raw pumpkin seeds and 1T raw sunflower seeds, and 1oz raw macadamia nuts and 1oz raw walnuts.

Todays lunch will be a Greek style salad with a little hummus and a Joseph's pita:
romaine, arugula, cucumber, tomato, Kalamata olives, onion, Greek peppers and Feta w/ an olive oil, lemon juice, garlic and oregano dressing.

Three salads in a day! Sort of. For lunch, I finished off a bit of cauliflower salad from the other day, plus some leftover chicken/veg curry that I turned into a cold noodle salad.

Dinner: taco salad. Lettuce, tomato, taco beef, salsa, sour cream.
