Default Daikon Radishes

I absolutely cannot find Daikon radishes around here. So, since I will be going to a way bigger city 3 hrs away this weekend, I am going to pick some up. But wondered if anyone knows if I can freeze these things? I wanted to get plenty, but didnt want them to go bad.
I also picked up some seeds and am going to try and grow them myself.

I find them more in "more expensive" type stores that carry a more diverse selection of foods. Only one store chain in my area has them, Publix.

I would say they could be frozen, but since I have not done so, it is simply an educated guess.

I would suggest perhaps shredding them, and packing in a container somewhat loosely, with water. They are a water rich food, so this only makes sense. If you froze them whole, I would expect them to dry and split in the freezing process.

Good luck, I love these things!

We get our daikon at Asian grocery stores....particularly, Korean or Chinese. Fresh Asian vegetables are always much, much, much cheaper at Asian grocery stores than they are at "mainstream"/American stores. For example, I've gotten 1lb of boy choy for .65....compared to over $1.50 at an American store. The veggies also tend to be fresher and bigger.

I think that since vegetables like daikon, boy choy, chinese broccoli and other foods are considered "exotic" by non-Asians, bigger food chain stores get away with jacking up the prices.

If the city you're going to has a relatively large Chinatown area, try finding some markets there. I'm sure you'll find some great prices!!

Also, I'm not sure about freezing daikon....never done it before, but I imagine the results are similar to if you froze a carrot?

One thing we do with our daikon is pickle it! Just cut the daikon and soak them in vinegar, water and soy sauce. We also make kimchi with it....the non-spicy kind (there are 100s of different kinds of kimchi).....just put slices of daikon in some water with salt, a few hot peppers, green onions cut long, and chill in the fridge. Kimchi never goes bad....in fact, the older it is, the better.

Here's a website describing the daikon radish....

http://www.whatscookingamerica.net/DaikonRadish.htm

Daikon is actually the Japanese name.

In Korean, it's moou.
