Talking Low Carb Hummus

i figured i'd post this here 'cause it's just too good. wish i could take all the credit, but like most of us we just modify what we find on the web. here's the original link below and my version as listed. eitherway, i am sure you will enjoy.

Edamame Hummus



my version:

1 1/2 cups green soy beans (edamame - or u can use brown or black canned soy beans)
1/4 cup tahini
1/4 cup water
1/2 teaspoon lemon zest
1 lemon juiced
2 clove garlic smashed
4 teaspooon kosher salt
1/2 teaspoon chief curry powder which contains coriander, cumin, garlic,turmeric, & fenugreek
1/2 teaspoon wasabi powder
3 tablespoons extra-virgin olive oil
1 tablespoon chopped fresh cilantro

Boil the beans in salted water for 4 to 5 minutes, or microwave, covered, for 2 to 3 minutes.

In a food processor, puree the edamame, tahini, water, lemon zest and juice, garlic, salt, cumin, and coriander until

smooth. With the motor running, slowly drizzle in 2 tablespoons of the olive oil and mix until absorbed.

Transfer to a small bowl, stir in the cilantro and drizzle with remaining oil. cover and refrigerate for a day or at least

until chilled.

carb count: per half cup serving 2 net carbs

I made zucchini hummus the other night. Same idea, but instead of soy I used steamed zucchini. Tastes great!

I thought the title of this thread said "Low-Carb Humans." I seriously had to blink several times before my brain saw it correctly. Is this a side-effect of low-carbing?

Steamed zucchini: never thought of that!! Great idea!!

interesting. i love zucchini, but isn't it watery? do u get the same consistency as a traditional bean-based hummus?

Could you give a carb count for this? How does the carb count compare to traditional hummus?

so yeah, i did this hummus recipe again. only this time instead of using edamame soybeans i used 1 1/2 cups of brocolli/carrot slaw. boiled it for 5 min and just followed my recipe above for the remaining ingredients. i also added about 15 medium size pre-cooked shrimp in the blender too because i wanted it to have a thick consistency like the edamame based hummus.

yeah. it's very yummy!

i didn't feel like making the flax crackers this evening so i just used my remaining cocktail shrimp to dip in the hummus and that was my snack for this evening.

It wasn't as thick, until I added 1/2 tsp of glucomanan powder to it (stuff that shiritaki noodles are made from). That thickened it right up.

You could always let it drain overnight after you puree it.
