So "pasta" was on the menu tonight for DH and DS. And here is what I made!
I used a zucchini, cut it into 4 slices (the long way), put 2 of them in the bottome of an individual casserole dish I have. Microwaved for 1:30 seconds.
Put about 3/4 of a cup of the meat sauce (made with 93% lean ground beef, and sugar free tomato sauce, plus garlic, onion, oregano, basil, thyme) on top of the zucchini slices.
Put 2 T. of ff ricota cheese on top.
Added about 1/2 cup shredded mozzarella cheese on top of that.
Baked in oven at 350 for about 20 minutes.
(I actually made 2 of these, so tomorrow I have another one when DH and DS are eating the leftovers of "their" lasagnae made the "traditional way"

I have to say this was AWESOME!!!! It tasted SO GOOD!!!! It was like "warm bubbly comfort food" !!!! But NO bad carbs!!!!
