Default Mini Breakfast Frittatas

I make these in a variety of muffin tins as I only have one mini, one regular and one jumbo. Cooking time varies from about 15 min. to about 25 mins. depending on the size of your muffin tin. I have also done a full sized one in a cast iron skillet. Make to sure to butter/grease if not using silicon baking equipment.

12 eggs beaten
1/2 cup heavy cream
1/2 parmesan cheese
about 6 slices of crispy bacon, broken into pieces
spinach, blanched and squeezed or sauteed
sauteed onion and mushrooms
salt and pepper to taste

Preheat oven to 350. Cook bacon first. Remove from pan onto paper towel to drain. Saute vegetables together in bacon grease until soft. Take off heat and set aside. Crisp the bacon and put pieces into bottom of the muffin cups. In a large bowl, mix all remaining ingredients together. Gently pour the misture over the bacon pieces until 1/3 to 1/2 full. Pop into oven at 350 degrees until tops just start to turn brown. Eat some right away. Let the other cool to room temperature before putting into fridge. Eat a snacks, breakfast, etc.

They are sooo yummy. I sometimes use leftover vegetables as well.

Yes- just nuke em for a few seconds or minutes depending on the strength of your microwave. I normally keep mine in the fridge as they seem to get eaten within a few days.

I'm going to make these on sunday morning for something a little special for breakfasts. Just the idea I needed to get away from plain ol' bacon & eggs!!

I sue different sized muffin cups and so it all depends. At least 2 dozen mini muffin cup sizes, less if using regular or jumbo. It will also make one huge one inthe bottom of a cast iron skillet.

I saw a similar recipe done on Rachael Ray show. It is a great idea for when DD's come over for breakfast.
