Smile Small, Fast Spice Cake

This is a variation of the Fast Devil's Food Cake and other fast cakes.

Small, Fast Spice Cake

2 T Almond Flour
2 T Whey Protein Isolate
1/2 t Baking Powder
4 packets of Splenda (or No-Carb stevia powder to cut carbs)
1 scant t pumpkin pie spice
2 T pumpkin
1 Egg
2 T unsweetened coconut (optional)
1 T chopped pecans (optional)

In a 2 Cup Pyrex glass container (I use a white grab-it bowl), blend all ingredients. Mix thoroughly. Cover with glass lid or plastic wrap with a slit cut in center for venting. Microwave on high for about 70 seconds. The cake should look slightly wet when it comes from the microwave; it will dry as it cools. This makes about 2 servings.

If desired you can replace the whey protein isolate with more almond flour. If you'd like a richer cake, melted butter can be added to the batter. The type of spice added can be modified to suit your tastes. The amounts of pumpkin, coconut, and nuts can also be modified as desired. Although I haven't tried this, you could probably add shredded carrot to make a carrot cake.

Iron - 13%
Vitamin D - 0%
Vitamin E - 2%
Riboflavin - 22%

ECC per serving 4.4 g
