Wink Chocolate! Chocolate! Chocolate Cookies!

While awaiting the arrival of my Carbquik shipment, I find myself in a cookie crisis. (TOM, you know!) So I played around and came up with this recipe today for a dry chocolate cookie (tastes and smells a lot like chocolate poptarts to me) that fills my chocolate spot. Makes a LARGE batch so I may try to freeze some and see how they turn out when thawed. Then I'd have something on hand if company shows up and I need something to go with coffee or tea. See what you think:

2/3 c. softened butter
2/3 c. oil
1 c. Splenda
1 c. Brown Sugar Twin
1 T. vanilla extract
2 eggs

3 c. pecan meal
2/3 c. Atkins Vanilla Shake Mix (dry, of course)
1 c. vital wheat gluten
1 bag Russell Stover "Net Carb" Chocolate Chips

Oven to 325.

Mix shortenings, sugars, eggs and vanilla well.
In a separate bowl, combine all dry ingredients except chocolate chips.
Add dry ingredients to wet ingredients a bit at a time. Mix in chocolate chips.

I dropped these by tablespoons onto an ungreased cookie sheet and baked for approx 12 minutes.
I advise letting them cool before trying them...I burned my tongue!

This is what FitDay has to say about the total recipe if you make 32 cookies total:

222 calories per cookie
19.2 g fat
9 total carbs
6.6 carbs of fiber and sugar alcohols (SA's in the chips)
6.5 g protein
