Default zucchini pancakes

Zucchini Pancakes


1-1/2 cups shredded zucchini
1 egg, lightly beaten
2 tablespoons biscuit/baking mix (I used carbquik, worked great!)
3 tablespoons grated Parmesan cheese
Dash pepper
1 tablespoon vegetable oil (I used coconut oil, and probably about 2 tablespoons instead of 1)

In a bowl, combine zucchini, egg, baking mix, cheese and pepper. Heat oil in a skillet over
medium heat; drop batter by 1/4 cupfuls and flatten. Fry until golden brown; turn and cook
the other side.

Yield: 4 servings.

After figuring it up in Fitday, the whole recipe has a net carb count of 5 carbs

These are great- I've always used yellow squash tho and added a pack of splenda and a few breadcrumbs. We call them squash patties! I've never tried zucchini - I will tonight. Also, I've recently put in a third breadcrums, a third almond flour, and a third parm cheese. wonder what other veggies we could grate up and throw in?!

Wow..........that is almost the exact same recipe I used the other night to make a pizza crust! I used soy flour though. I baked in a 9X13 pan, and after baking it for 10 minutes, I broiled the top (lightly oiled top first), till nice and brown, then added a very small amount of pizza sauce,lots of mozzerella cheese and toppings of choice. Came out delicious!!!
