Default Artichoke Stuffed Mushrooms

My sister and I made these for a bbq and everyone loved them.

Artichoke Stuffed Mushrooms
3 oz cream cheese
1/4 c mayonnaise
1 jar (6.5 oz) marinated artichoke hearts, drained and finely chopped
1/4 c grated parmesan
2 T finely chopped green onion
20-25 large fresh mushrooms, stems removed

In mixing bowl, beat cream cheese and mayo till smooth

Beat in the artichokes, parm and green onion

Spray tops of mushrooms with nonstick spray

Spoon mixture into mushroom caps

Sprinkle with a fine coating of parm

Bake at 350 till mushrooms are tender and tops are golden brown (I forget how long we did them for. The original recipe called for grilling them, covered, over indirect heat for 8-10 minutes)

These were sooooo good, I could not stop eating them

btw, this recipe came from an old Quick Cooking magazine...

I don't like mushrooms...but the stuffing sounds wonderful. I'm going to try that in some stuffed peppers. I'll just cut them into quarters.
