Default Whats For Dinner????

Hi Everyone. We've posted a thread like this from time to time.

I've moved on from phase 1 and will be adding phase 2 goodies.
And thought maybe this would be a good thread to get going again.
I know I can use all the ideas I can get to make somthing different.

Our weather has turned cold here so its going to be Chili tonight.

Grd vension, beef, tomatoes, zucchini (grated), onion, celery, hot peppers, black beans, kidney beans, chile powder, garlic powder, cumin, cyan pepper

Keep in mind you put all kind of different veggies in this or soup. Great way to get extra veggies in.

I put celery in almost everything. I buy it when its on sell and put it thru the food processor to slice thin. Then just put in a zip baggies so it ready to grap a handfull to toss in. I do the same with the zucchini but I portion it out as it tends to stick to gether. Anything I prep ahead I do.

HI Skippie!!

Good idea to make this thread happen!!
I had a really nice dinner last night that'd be good for phase I or II.

Italian Frittata
I first roasted up a bunch of bell peppers, sliced sweet onion and garlic cloves in the oven. Spritzed it with evoo and some sea salt....on 400 for 30 minutes. When it was done, I smashed the garlic cloves and made sure it was all mixed together.
Then I spooned some canned diced tomato on top and sprinkled it with shredded mozzerella.
I used 5 eggs that I mixed with water and a little H&H and poured it over the whole thing. Sprinkled a bit of oregano on top.
Baked it on 325 for 30 minutes.

....and 1/2 of it was dinner last night with a small salad......and I was stuffed!! but it was goooood!!
If I wanted to hve a starch, aka phase II, with that meal, I would've had 1/2 cup of sweet potato.
I'm loving my new convec/microwave oven as I was never able to bake or roast anything prior to this.

Tonight I'll be having grilled wild lemon sole filet with roasted asparagus.

My fave and an easy P2 dinner is a nice lean cut of pork seasoned with rosemary and garlic and grilled then topped with grilled apples (fuji seem to be the sweetest to me) and onions! MMMMMMmmmMMMMM!
Like pork chops with apple-sauce but without all the added sugar.

One of the reasons I fell off plan is that I felt stuck with the same old foods, so I am definitely lovin these ideas people, hope we get some more!

P.S. I know about the recipe thread, I just got lazy also, back in the game though!

I had a crazy day....shopping, more shopping and then a bit more shopping.
At least I got all my walking in today.

Dinner tonight was shrimp scampi. Quick and easy.....

Pre cooked peeled frozen shrimp. I took the shrimp frozen tossed in a baking dish added 1c chix broth good sprinkle of garlic powder, onion powder, dry parsley , black pepper. Not sure how long it baked about 20 min 350*.

Didn't use butter cut it out.

While it was baking I steamed fresh brocc.

Boring for me.......grilled burger w/reduced fat cheese and broccoli....Good though!

Night before last, I did have the broiled lemon sole filet but I had it with roasted cauliflower and onions with evoo, sea salt and dijon mustard thinned with water over it all. very good!

Last night, I had the other filet with the roasted asparagus....quite an excellent meal!!

I'm trying out a new recipe- it's adapted from a prevention recipe for tofu, but I am using tilapia:

Basically it's tilapia with a miso/fresh orange juice marinade (baked fish), topped with bell peppers, scallions and edamame.

Rice for the fiance, and an Asian salad for both:

greens, cuke, tomato, roasted bell pepper, a little edamame maybe? And rice vinegar with oil to dress

Oh, and we are having a little wine tasting to celebrate (I'm just getting home after traveling on business).

I reached my goal weight this morning!!!!!!!!!!!!!!

Way to go Robin!!

Chix stir fry tonight.
Just chix cut up cooked in chix broth. Lots of fresh garlic, and onion. Then add what ever veggies you want. Sprinkle with some lite soy sauce, and cyan pepper and dry red pepper flakes. I use a lot of brocc, caulf, either sugar snap peas, or snow peas, zucc, mushrooms. Really just what ever I have in the frig.

Great way to clean out all the old veggies, and its made in 1 pan. I use a large skillet.

I made chili with lean grd beef and extra veggies last night and had it with roasted brussel sprouts.....

Not sure what I'm making tonight. Seems the weather plays into what I make.
Today its overcast with off and on drizzle. Not real cold but very damp so it feels even colder.
