I made coconut rev rolls today....i used 3 tbs coconut flour and 1 tsp coconut extract...
omg tastes almost like a coconutty angel food cake!!

Kerry - I've got them in separate ziplock bags in the freezer,labeled w/what they are,so I don't mistakenly grab a pb one to make a BLT! Oh,and I have them "double bagged" b/c I always worry about freezer burn (Blech).

ETA: I saw you used coconut flour! Question, though - 3 T seems like a lot, being that cf is so darn thirsty. I would guess that 3T would make them more like huge macaroons?! I want to try that version too!!! A girl after my own heart - sweet variations of rev rolls!! Guess I'll be baking alll weekend!

Wow-coconut rev rolls-I will be making these. I've tried the macaroons in the past and been so disappointed.

This was my coconut version

4 eggs seperated (WHITES FROM THE YOLKS IN 2 SEPERATE BOWLS)
2-3 heaping tbs coconut flour
1/4 tsp cream of tartar
1 tbs coconut extract
12 drops of sweetzfree or equiv sweetner of choice to about 1/4 to 1/2 cup.

Take your egg whites and cream of tartar and mix on high speed with an electric mixer until they are peakable about 4-5 minutes.

Mix all of your other ingredients together with your yolks and gently fold them into your egg whites.

Spray a muffin top pan or use a cookie sheet and make six mounds, bake this on 300 at 40 mins.

Ok Betsey gave me this link (bless you again!) anyone got an idea for dairy free topping as i'm trying a cutting it out experiment cos i've been pretty sick/tired after eating it lately.

Macadamian butter, almond butter, maybe make a cinnamon butter? Smuckers makes a sugar free caramel topping I use a very tiny amount of that ontop of each at times too.

Daisy - I've used Smuckers SF Strawberry Topping on the coconut ones with very good results! And on the PB ones, I've used SF chocolate syrup and also SF jam. Kerry has a good idea for cinnamon butter too!! YUMMMMMM.

Thanks for the ideas, i know i can get almond butter at the local supermarket and cinnamon butter sounds I refuse at this point to take butter out of my plan!!!!!!!!!

Gonna make some pumpkin rolls today and the traditional ones with mayo and see how i get on with them.
