Default Oven fried Zucchini w/ blue cheese dressing

I found this recipe from Kevinpa and tweaked it a little...




I slice mine kind of thin so they will be tender.
Line your baking sheet w/ foil and spray w/ non stick spray
Preheat oven 350

-2 eggs beaten in a small bowl
-about 3/4 c of parmasan cheese & whatever seasonings you like mixed in a seperate bowl. (I used Ms Dash. We have to watch the sodium.)

Poke your zucchini w/ a fork in the center a couple of times. Dip in egg then in cheese mix. Lay on baking sheet. Bake until desired browness. I don't flip them. If you need them to get browner on top, turn broiler up for a few minutes.


They tend to come off of foil a little easier if they sit a couple of minutes.

These are nummy!!!!!

What I did differently:

I had egg yolks left over from some other LC cooking, so I used yolks only
I used parchment paper to cover cookie sheet
I am dipping them in Ranch dressing even as I type!

I have a garden full of zucchini so I copied your recipe. Sounds and looks very good.
