Strawberry Salad with Creamy Poppy Seed Dressing
I saw a couple of other strawberry salads here, but this is yet another version. My parents made this for Easter and it was really delicious with our ham! Just use romaine lettuce, sliced strawberries, and sliced almonds and top with a creamy poppyseed dressing (see below). Sunkist Almond Accents are especially delicious in this, and they come in a variety of flavors. I think my folks used garlic caesar almonds.
Creamy Poppy Seed Dressing:
6 T Splenda
6 T mayonnaise
4 T heavy cream
2 T white wine vinegar
1 T poppy seeds
Whisk together and store overnight if possible, for the poppyseed flavor to infuse the dressing. This dressing is enough for about twelve salads, assuming you are using about 1.5 T of dressing on 1.5 C lettuce. Slice just 1-2 strawberries to top, and a generous sprinkle of sliced almonds. Yummy!
Ironically, something about the sweetness and the combination of berries and nuts helps me stay away from the kids' Special K with Red Berries!
