Default shrimp and bacon

Two of your favorite things, back together again! I thought of this one day when I remembered having once cooked a goose wrapped in bacon . . .

16-20 Very large shrimp*
8-10 slices thick bacon

- Cut the bacon strips in halves
- Wrap one bacon half around each shrimp, secure with a toothpick
- Cook in a preheated oven at 350 for half an hour.

You really need both the 16/20 sized shrimp and the thick cut bacon for even cooking. Turn shrimp over after the first 15 minutes. Next week I might try this with sea scallops - - -

*Called "16/20s" in the trade because they average between 16-20 shrimp per pound)

Friends of mine served these as finger foods at their New Year's party a few years ago...

...and they were SO yummy that I still remember how good they tasted!

One of my favorite restaurants, Topeka's (haven't been since starting this WOE) makes something like this and my hubby has duplicated it...

They use a sliver of jalapeno wrapped up with the Shrimp and the bacon.... YUMMY!!
