Default Bacon Wrapped Meatloaf

I made this last night and it was fabulous.

Bacon Wrapped meatloaf

1.5 lbs lean ground beef
1 cup of shredded cheese
1/2 small onion chopped
1 tsp garlic
1 tbsp worcestershire sauce
2 tbsp ketchup
2 eggs
salt & pepper
10 slices of smoked bacon
Preheat oven to 350 F

Mix all ingredients in a bowl except for bacon until mixed well.

Then take a piece of seran wrap lay it on counter, lay out 5 slices of bacon, take 1/2 of the meat mixture and form into meatloaf shape, lay on end of bacon then use the seran wrap to roll it, so the bacon eventually wraps the whole roll of meat. Lay in cake pan and repeat with 2nd half of meat.

I baked this last night for 80 minutes, it was fantastic and did not overcook and the bacon adds such a yummy flavor.

I figured about 6 servings for this.

Yep. I agree. I made this meatloaf last night for company and EVERYONE loved. They also ALL left with a copy of it (good thing my home printer was working).

Thanks for posting it wangeci - it's a keeper in my house!
