Mel's Restaurant-Creamy Cole Slaw
The heavy cream, along with the water, in this recipe is the secret ingredient for a creamy, delicious slaw.
Ingredients:
3 c. green cabbage
1.5 tbsp. white vinegar
2 tbsp. mayonnaise
2 tbsp. heavy cream
2 tbsp. water
1/2 packet Splenda
salt
pepper
1. Shred the cabbage very fine.
2. Add vinegar.
3. Add Splenda; sift around--there's not much Splenda here, so it takes a flick of the wrist.
4. Add mayonnaise, heavy cream, water, salt and pepper.
Mix very well. Cover with Saran Wrap. Place in refrigerator for 1-2 hours before serving.
Watch your servings on this. It has about 75-100 calories per 1-cup serving depending upon how you measure (packed down or just tossed in). There are 5-6 non-net carbs per 1-cup serving.
