Default Hot and Sour Broth (chicken or prawn)

EITHER:

HOT & SOUR CHICKEN BROTH

Chicken stock (enough for two large portions)
1 clove garlic
4 cm cooked fresh ginger
1 tbslp of fresh coriander (we buy a batch and keep it in the freezer)
2 squeezes of lemon juice
a few drops of tabasco
bok choy cabbage chopped (or similar: spinach or mushrooms would be good, but boil them from the start)

Boil everything except the bok choy for a few minutes, then add the cabbage and boil for a minute.


OR:

HOT & SOUR PRAWN SOUP


water (enough for two large portions)
vegetable stock cube (or similar)
1 clove garlic

1 tbslp of fresh coriander (we buy a batch and keep it in the freezer)
2 squeezes of lemon juice
a few drops of tabasco
Bok choy cabbage (or similar: spinach or mushrooms would be good, but boil them from the start)

Boil water, stock cube, ginger & garlic for a few minutes. Add the prawns & coriander and boil 2 minutes, then add bok choy and boil for one minute. Add a squeeze of lemon juice and a few drops of tabasco.

P.S. Coriander is called cilantro in the States.
