Default Firehouse "potatoes" ! mmmm!

I just had to share this recipe because it turned out so good. It's a recipe my family LOVES for potatoes, so tonight, I made some for them with potatoes and some for me substituting cauliflower. It tasted fantastic! The amounts of the ingredients are all to taste.

Firehouse "Potatoes"

Cook Cauliflower in micro until soft.

In a cast iron pan, heat 1-2 T. olive oil. Saute chopped onion until soft and mix in cauliflower.
Sprinkle to taste:
chili powder
paprika
salt
pepper
garlic powder

Mix seasonings into cauliflower/onion. Dollop with sour cream and salsa, add sliced jalapeno peppers, and top with plenty of shredded cheese. ( I use cheddar, but the original recipe calls for pepper jack, I believe.)

Put in a 400 degree oven for a few minutes until cheese is melted.

Whoa...I knew I got that cauliflower for some reason...think I found it! sounds great. thanks for sharing!

Wow- this looks like something my dh would really go for! Will have to try it soon. It almost sounds like a dish I have had at a local Indian place.
