I made them. I'm not sure what I did wrong, but as they cooked all the egg and butter came out of them. I had little islands of spinach surrounded by an ocean of egg mixture.

They were still okay, I guess, but I'd love to know what the heck I did wrong!

I got little halos on mine too so I reduced the amount of eggs in half. Plus, you want to make sure the spinach is very dry which is hard to do. HTH

I made these, but I didn't cook the spinach. I thawed it in a sieve over the sink and then squeezed out as much water as possible (probably could have still gotten more out but oh well).

Next time I think I think I'll add some crushed pork rinds or almond flour to help hold their shape better. Mine flattened out and were more like spinach disks or spinach domes rather than spinach balls.

Other than losing their shape in the oven I loved the taste and texture!
