Default Nutrition Facts for gluten

I read the thread where you said it had 24g carb per cup. Is that the standard for all gluten or just vital? Is there any fibre in gluten?

Vital Wheat Gluten is a particular brand/formulation of wheat flour, 75-80% protein (the gluten part). It's often called gluten for short but it's technically Vital Wheat Gluten Flour. Pure gluten is very hard to find, and isn't made. Maybe the Wheat Protein Isolate 8000 comes close (90% I think), but it's another particular brand/formulation and only known by that name.

The gluten part of these products is a pure vegetable protein, no carbs or fibre.

The onsite carb counter can tell you (click on Tools on the green menu bar above) if any of the total carbs in Vital Wheat Gluten are fiber carbs. But the 24 you mention are very likely net (countable) carbs.

Vital wheat gluten (also called gluten powder or gluten flour) is manufactured by making a dough with flour and water, kneading it, and then washing away the starch. Because of the process involved, different brands will have varying amounts of residual starch (carbs), so it's best to check the nutritional label for your particular brand.

Thanks Scott! Unfortunately it doesn't have one. I don't know why flours, no matter what type, don't seem to have any info on them at all.

If it's from the "bulk bin" section, the store/retailer has the bag in the back which has to have the Nutrition Info on it...and failing getting an answer from the retailer, I have asked them (and gotten an answer eventually) to get that information from the distributor and faxing it to me...I believe the information is supposed to be "available" to the consumer by law. Tho sometimes it takes a while .

Not the bulk bin. I'm not sure about the law here in Norway, but I did ask the stores it is sold in and they didn't have the info. I don't know.
