stuffed jalapenos (I am so happy these are lo-carb!)
about 15 nice fat jalapenos
1 pound bulk italian sausage
1/2 brick cream cheese
a handful of fresh grated parmesan, romano, or asiago cheese (NOT powder, the grated kind that you either grate fresh or buy in a bowl in the cheese section!!!!!)
WEAR GLOVES WHEN WORKING WITH THE JALAPENOS!!!! TRUST ME!!!
cut peppers in half lengthwise and remove seeds and membranes (the less membrane left, the less heat)
brown sausage and drain well, breaking all clumps while browning
add cheeses and mix thoroughly
stuff each pepper half with about a teaspoon (give or take) of mixture
place on cookie sheet and bake at 375 for about 35 minutes. You want your peppers soft. I have also done it on the grill but not sure of the time for that.
I served this tonight as dinner with one of those tomato and fresh mozzarella salads!!! These are AWESOME for tailgating and taking to family reunions----they GO!!!! ENJOY!!!!!
