Ken, I did lots of similar reading years ago... links long gone, but one of the more interesting sites was a celiac forum like this one. One interesting factoid I recall is that gluten is a catch-all term for over 100 slightly different proteins. Gliadin is one you might have heard of - anti-gliadin antibodies is the basis of the blood sensitivity test, or at least it was last time I worked as a lab tech eons ago.

The mission: Deep ketogenic eating everyday
The rules: Eat less than 20 net carbs per day and less than 15 net carbs at any one meal.
Other parameters: I will give myself up to 5 passes/exceptions throughout the 90 day period, but they cannot be used on consecutive days. These are not free-for-all days, but an allowance to take into account that perfection is not required.

Passes used: 5 of 5

My 90 day challenge: Only LC sanctioned pizza, no other.
Goof ups allowed: 3, but not more than 2 pcs.

zero goofs left.

Would like to add on: 1 T flax every morning. 10 misses allowed.
10 misses left; 0 used

So far so good! Actually consumming 2-3 servings a day on the flax.

Ken, IMO research is still in its infancy stage regarding the gut and foods. I often think us lay people are ahead of the curve.

I too use glutin, and cringe every time. My body is still fine with it.

Care to share the pancake recipe? Im hoping my kids will like them.
