Default Chipotle Style Lime/Cilantro "Rice"

Chipotle restaurant has wonderful lime/cilantro rice. I decided to recreate with "cauliflower rice".

Ingredients: head of cauliflower, 2 limes, a bunch of cilantro, salt, oil or fat for sauteing.

Shred/grate a head of cauliflower.
Zest a bit of lime into it. 1/2-1 tsp.
Squeeze juice of two limes into it.
Chop a bunch of cilantro (use however much you want).
Add salt to taste

Saute (I used chicken fat I had... yum!) until the cauliflower is soft and a bit like rice.

Cauli-rice came out to be more like cauli-couscous since i grated it on the 'grate' setting in the blender. But it turned out really good! I added some curry leaves and red onions for more flavor and some turmeric for color!

Awesome! I saw the thread title and I was hoping you were going to say that Chipotle's rice was actually super low carb I live in Australia and a Chipotle buritto bowl is one of my favourite things about a trip to the states since I am strictly gluten free and it's one place I can eat safely and easily. I am already trying to psych myself up to order it without the rice, or with only a teeny amount of rice. Now I can make this and hopefully by the time I get to the states in July, I will be less totally enthralled by the real thing.
