ratatouille rapido
Yesterday I wanted ratatouille but I didn't have much time to cook. I remembered a recipe I read where it takes much less time and only uses one pot. So I tried it:

I took it a couple of steps further, to make it faster. First, I halved the recipe to 6 servings (half as many veggies to chop; plus I don't really need 12 servings in this house, and my freezer is full). Second, I used one 14 oz can of diced tomatoes instead of fresh tomatoes. Third, while I tried to make all the pieces of veggies about the same size, I didn't obsess about it. I remembered watching pro chefs on TV and how fast they move and tried to emulate that.
Total time from "starting to wash the veggies" to eating: 1 hour. It was pretty good, but tasted like something was missing. I realized this morning, when reviewing the recipe: I'd forgotten the zucchini! Even forgotten that I had one in the crisper! *slaps forehead* Still, it was pretty good.
