Some people use coconut amines. Check a health food store or order online. Fish sauce is similar in flavor.

Chef Ming Tsai uses a combination of lemon juice and salt as a replacement for soy sauce.

I have coconut aminos - they're expensive, and don't have quite the depth of soy sauce, unfortunately. I do use them, but don't *love* them.

I recently made this - it's worked really well as an ingredient (where you use soy sauce as an ingrendient) - the author says that it's not good on it's own, just as a sub in an ingredient. I made a double batch and froze in small portions, it seemed like such a good idea! Happy with it.

Yes, with the Asian stuff (if they carry it). Do you have any asian markets in Durham? I bet you do. You could go in and buy some there. It is vastly cheaper. So is coconut milk.

One bottle of fish sauce will last you a long, long time. I use it regularly in recipes and was still working on a bottle from 8 years ago - finally decided to replace it because the top was gunky but there was actually about 1/6 left... Check labels, several add weird stuff & sugar, but some brands don't (I believe in the US one brand without is Red Boat - you can probably also order it online)

if using fish sauce instead of soy sauce do I use the same amount? I have been avoiding recipes that call for soy sauce if I could replace the fish sauce that would be good.

Fish sauce is super salty, so I'd go easy and taste. Add more if needed.
