ooh- will have to try parsnip or rutabago.....my fiance bought me a veggetti, before ultimately confessing he doesn't like zoodles!

I love my Vegatti and think my favorite thing so far is hash browns or latkes. Just scramble eggs and season. Dredge the zoodles into the egg and I let them sit to absorb while I prepare the pan with my oil. I drop little mounds and let them crisp, then flip. They're really good!!

Those casseroles are great, have made them before and last night was no exception. The PaleOMG website author is good because when she finds a winner, she will riff off into other many variations and her recipes lean to the simple with a short list of ingredients. Her new cookbook and website have a buffalo ranch, Mexican, etc version...the size and ingredients of this basic recipe are flexible.

Usually the amount of spaghetti squash fits better in the next larger dish, so it bakes faster and has more "crust", plus I add Italian shredded cheese on top . I was using up a squash and half a jar of sauce, but next time will try a zucchini version.

Ohhh, now I understand why you may want a "C-shaped cut" as noted the instructions! I'm having fun that goes on and on with Santa's "surprise"...anyone try a good new recipe? Just doing butter and a sprinkle of cheese to get back on the wagon...but this pile of fun deserves more.
