Cool ratatouille rapido

Yesterday I wanted ratatouille but I didn't have much time to cook. I remembered a recipe I read where it takes much less time and only uses one pot. So I tried it:

http://www.beyond.fr/food/ratatouille.html

see "Our Method" near the bottom of the page

I took it a couple of steps further, to make it faster. First, I halved the recipe to 6 servings (half as many veggies to chop; plus I don't really need 12 servings in this house, and my freezer is full). Second, I used one 14 oz can of diced tomatoes instead of fresh tomatoes. Third, while I tried to make all the pieces of veggies about the same size, I didn't obsess about it. I remembered watching pro chefs on TV and how fast they move and tried to emulate that.

Total time from "starting to wash the veggies" to eating: 1 hour. It was pretty good, but tasted like something was missing. I realized this morning, when reviewing the recipe: I'd forgotten the zucchini! Even forgotten that I had one in the crisper! *slaps forehead* Still, it was pretty good.

okay I made this again (full recipe) this weekend. It's a summer staple! Delicious as a side with any kind of meat or fish, or as an omelette filling. Doesn't anyone here like ratatouille?

Yes I do! I actually make this all the time (discovered it by myself through experimenting in the kitchen) and never knew it was ratatouille! The comment on the recipe page about this being good with cous cous is spot on. That is actually how I first used it and came to perfect my own recipe years ago.

Glad to see someone else here likes ratatouille! It's very compatible with the LC WOE.

I love it and have it quite often but my family, not being gourmets, always just called it stewed tomatoes and we were quite free about what veggies were included! Eggplant was not something my mother EVER used so it's not high on my list of commonly used veggies, although zucchini was not uncommon, and heavy on the basil!

I think I stumbled upon this thread by looking up zucchini but I am glad I did because I made this for the first time earlier. WOW! I will be making this A LOT. So good!
