Default Whatcha cookin' today?

I'm very busy in my kitchen today.

I just sauteed mushrooms and spinach in EVOO, crushed garlic and crushed red pepper with a splash of worcestershire. I am going to eat it in an omelet.

Then I'm going to make a pot of chicken /veggie soup...a pot of split pea soup....and I need to make new chili too!!

I'm gonna be so busy chopping today!! I'm glad I got a knife sharpener so that I now have sharp knives!!

Default Whatch cookin today?

I made a cannellini bean and kale soup w fresh garlic,dried oregano,chick stock and tomato paste.

Also did a turkey salad w chopped celery and swt onions to be served as a sandwich on romaine lettuce leaves

Also did tilipia in parchment w onion,tomatoes,lemons slices and 5 spice

I braised some round steak yesterday, so that's in the fridge ready to be reheated. For dinner we'll have the steak, mashed cauliflower and sliced tomatoes.

My husband and I work long, crazy hours, so quick and easy is what we like. I have the South Beach Quick and Easy Cookbook and will be making some recipes from that. Also canned beans (especially garbanzos) are a lifesaver. I throw them into lots of salads to up the protein. And I discovered (well really learned this from someone else on SB), that canned, refried beans make a great side dish substitute for mashed potatoes. It's true! I use the vegetarian or fat free ones, not the ones made with lard.

I made the "taco skillet" last night and it was amazing!!

Add the cabbage and cook, uncovered, 5 minutes, stirring occasionally. Add salt to taste, if needed. Sprinkle the cheese over the top, cover and cook 2 minutes until the cheese melts. Stir in the cheese. Top each serving with 1 tablespoon sour cream and a pinch of cilantro, if you like, but they are not included in the counts.

Makes 6 servings
Can be frozen

Per Serving: 383 Calories; 24g Fat; 32g Protein; 11g Carbohydrate; 3g Dietary Fiber; 8g Net Carbs



I got this recipe from the "Low-Carb Quick & Easy" cookbook. I used a full 2 pounds of ground beef instead of 1 1/2 pounds and used my homemade taco seasoning rather than the high carb stuff in a packet. Rather than waste 6 ounces of the slaw mix, I threw in the whole bag rather than just 10 ounces like the recipe called for. This is one of those comforting one-pot meals that your family will enjoy. If you can afford the extra carbs, use the sour cream and a little more cheese sprinkled on top. It reminds me a little of the Like Velveeta Ro-tel Main Dish recipe, but with more of a Mexican flavor. Click the photo to see a close-up.

yum. that taco skillet looks great!

I am having a big salad with roasted turke breast on it for lunch. (and probably the same tomorrow for lunch)

For supper... a grilled 93% lean hamburger, steamed green beans with garlic, and a salad with lotsa veggies.

Today is day 2 of phase one for me. So far so good.

For lunch I made a lean pork chop baked in the oven w cauilflower and brocolli casserole w 1 oz. of reduced fat Mexican Cheese.Not bad at all.
Dinner will be a my homemade crab salad on a bed of lettuce with slice tomato and dill pickle. I use celery,mayo(1T) in the crab. Even if I wasn't doing SB I don't like to mask the taste of good crab.

Tonight I will be having a mug of split pea soup that I made last weekend and some steamed broccoli along with some (salty) chicken (I might opt for the beans tonight instead ).

For lunch I had huge yummy salad. For dinner I had grilled chicken, fat free refried beans, with a half slice of american cheese on top and fresh green beans sauteed with olive oil and garlic. Interesting combo but satisfying none the less.

Judy, that taco skillet looks great and I can actually get my family to eat that. :-) Thanks for posting the recipe.

all these foods sounds so good, and taco skillet looks amazing...
well I had for lunch, some shrimp with some cheeses, then for dinner my dh and kids had spaghetti bolonese, I had the meat and sauce, with mashed cauliflower, I went to 2 stores to get spaghetti squash, no where had any, so the cauliflower replaced it still pretty good..........

Last night we had:

- steamed fish w/ ginger and green onions
- gai laan (stir fried, a sort of "Chinese broc")
- Chicken stewed w/carrots
- cabbage cooked w/ a bit of tofu, broccoli, and mushrooms

Tonight I made my pasta-free lasagna...then I ended up eating all the melted cheese off the top layer!!
