Default Single Serving Cheese Sauce

Tried to find it here, guess I heard it talked about somewhere else, but since I needed it, I kinda invented it

I now make it fresh for veggies and ham combos: quick and easy Mock Mac 'n' Cheese kinds of things. Or quick dip!

Tiny Cheese Sauce

1 oz cream cheese
1 tbl heavy cream
1 oz cheese of choice (white cheddar is what I used)
1 tsp dijon mustard

Assemble ingredients in bowl, chop or shred cheese. Microwave for 30 seconds at half power, stir, microwave 30 seconds at 1/3 power. (1200 watt oven; half power setting 5, third power setting 3.)

I like it thick; add a bit of cream or butter to thin if desired.

Stir again, and add some black pepper. Enjoy!

I have been having it at least once a day pouring it over a bowl of broccoli and ham. Mac 'n' cheese? THIS is better!

I read about your spiral ham. Those are really nice to have on hand for just about any meal.
Yum, I want some now.
I love to make quiche when I have cooked ham.
Here is my recipe.

Crustless Quiche
Dozen large or jumbo eggs
2 cups heavy cream
2 cups shredded cheese (cheddar, swiss, mozzarella, monterey jack etc)
1 to 2 cups of cooked meat (bacon, sausage, spam, ham etc)
chopped onion to taste (optional) - (remember the carbs!)
broccoli or other cooked veggie or fresh baby spinach (optional)

Whip up the eggs and cream. Fold in other ingredients. Pour in a 9x13 inch pan. Or pour in a large muffin pan (makes 12 muffins).
Bake 20 minutes at 350 degrees or until cooked through (a little longer if in the 9x13 pan). This freezes exceptionally well, just nuke in microwave for 60 seconds or so. Make a batch on the weekend for quick and easy breakfast during the week.

Bake at 350 for 35 minutes.. let cool before cutting.
(Leftover taco meat is great for Mexican flavor)
