Weight loss on zero carb is variable. I have been zero carb for three weeks today. I have very little, if any, weight to lose, and have not been trying to lose weight, but I have lost two pounds anyway.
My biggest joy at this point is that I have absolutely no cravings, very mild hunger, and all my previous obsessing and struggling over food has vanished. Another thing I love about it is that I can eat as much as I want whenever I want, and there is no need to measure, weigh, or curtail portion sizes. I can eat a full pound of ribeye at one sitting with all the fat.
The loss of cravings and less hunger happen fairly fast, as long as you absolutely have not a smidgen of plant matter, only animal source fat, meat, LC dairy, and eggs. No artificial sweeteners or sweet taste whatsoever, or you will keep the cravings alive. Even the thought of eating something carby or sweet can make the insulin production rise! My only holdout is one cup of coffee daily; I think someday I'll be able to release that too.
The thing about zero carb is that it is, first and foremost, a healing modality for runaway insulin production and fat storage. For people who have this compromised metabolic mechanism going on (which is practically everyone with excess fat), it is a way to put a halt to the dysfunction and put it into remission, so to speak. But it takes some time to adapt, it can be rough, and it takes a while for the insulin production to go down.
Weight loss is, of course, part of the healing process of zero carb, but it may not be an immediate or rapid result of going zero carb. Some people lose a lot of weight, even at the beginning, others lose nothing, and some even gain for a while until their bodies assimilate what's going on.
Some people will strip down to eating only meat and water, and their weight loss may increase that way. Others don't have to eliminate anything, and they lose. Others strip down to meat and water only and don't lose weight or gain a little. Their bodies are in extreme healing mode and aren't ready to release weight quite yet. Either that, or fat is being released and muscle is healing and building. Some wear smaller size clothes and no loss has been noted on the scale.
There is tons of information at the ZeroingInOnHealth.com forum. I will be happy to try and answer questions about zero carb from what I have learned over there, but if you want to really bone up on what it's all about, a perusal of FAQs and science areas of that forum is a gold mine.
This is the only way that I've ever found to see an end to the obsession and insanity of my runaway cravings and insulin, so it will be a woe for me, and the only way that I can see successfully maintaining my weight loss. I'm more at peace over food than I've ever been, and I have no plans to go back to the insanity and chaos.
