Default Squash and Zucchini Casserole

There are so many recipes out there I know, but I wanted to add one that I make each week. I love it.

1 medium yellow squash (sliced)
1 medium zucchinin squash (sliced)
1/3 large onion
1 TBL cream cheese (I use whipped)
2 TBL sour cream
6 TBL heavy cream
1/3C Jack Cheese
1/3C Cheddar Cheese
garlic powder or salt
salt and pepper
dash of red pepper or hot sauce

It helps to cook the squash slightly (boil), and then drain all the excess water...
Layer the yellow squash on the bottom of a buttered pie plate, follow with half the sliced onions, salt and pepper. Then layer the zucchini, follow with onions, salt and pepper. Top with cheese (you can use any kind of cheese, I just like this combo the best) Melt the CC in the microwave a little, add sour cream, heavy cream and garlic (and hot sauce or any seasoning of your choice). Pour over casserole. Bake at 350 for 30 minutes. I always use variations, and depending on how much squash you have, you may need to alter the sauce. It's not overly cheesy and has a good flavor.

Carb 24
Fiber 7
Protein 27

If you want a lower carb count, you can use all zucchini, it will lower the recipe by 3g.

Wow, this is excellent. I did saute the zucchini and onions first which probably adds a few carbs, but this was soooo good. Thanks
