Default Bacon Fajita Salad with Eatable Parmesan Bowl

Here is a favorite of mine, you need:

lb of marinated fajita meat (beef or chicken) I hope this is available all over

12 oz of bacon
8 oz of Cheddar Jack cheese
2 yellow onions
1 red pepper
3 cups parmesan cheese
Guacomole, salsa, or sour cream (topping)

Slice up the vegatables and fajita. Fry the vegtables in olive oil until soft. Cook the meat and bacon seprately. Tear the bacon into small pieces.

To make the salad bowl, put 1.5 cups (for each bowl) of shredded parmesan cheese into a non-stick skillet on high temp. After a couple of minutes (watch the bottom for brownness) flip it over for another 60-90 seconds. Remove it from the pan and form it over a upsidedown bowl. Let cool for 20 min.

Put a lettuce base into the parmesan bowl and place the rest of the ingredients, topped with cheese on top. Microwave the cheese to melting and then top with guacomole, salsa, or sour cream.

Total carbs......20-25 depending on how much of the parmesan bowl you eat

It does take a lot of chopping, so I make enough for several meals at a time. I also use the parmesan bowls for taco salads and pizza dough

Just curious shark,

do you use fresh grated parm or the stuff that comes in a carboard can (i.e. Kraft)

3 cups of parm sounds REALLY expensive (at least where I live)

Rest of recipe sounds great.

I usually make a taco thing with ground beef, chili powder, cumin, after cooking I add sour cream and shredded cheddar cheese. I put it all over iceberg lettuce (lots of crunch) and mix it all up together. My own personal comfort food.

OOhh This one sound GREAT!! But Im still on Induction, i think that may be to many carbs for now! But I am for sure going to try this one soon!!

I buy the shredded Parmesan in the bag (Kraft). A 2 cup size bag runs about $2.50.........but using 1 1/2 cups makes for a very large bowl. I find I can make smaller bowls for side salads and such using much less cheese.

I am going to try this recipe this week...Sounds delicious!

Thanks for the Kraft in a bag info...I was going to buy the deli type (more expensive)...Kraft will be easy to find & cheaper to boot.

I'm anxious to try this.

Hi Shark!!!! Your recipe sounds wonderful. I just printed it out to add to my low carb recipe collection. I love the idea of the edilble bowls.....we sometimes go to a Mexican restaurant, and it is so hard to leave that empty totilla bowl alone after eating the taco salad.)

I bought some parmesan at the store this morning ($2.79 by the way) to use as a side dish. I like these bowls with a regular salad too.

So has anyone here tried this reciep and if so what is your opinion? I guess I'm the "let Mikey try it" type.

Sounds like a good recipe, hope some of you who have tried it will let me know what you think.
