Default Turkey Gravy (thickened with xanthan gum - my new fave!)

What you'll need:

Turkey drippings
1 tsp xanthan gum
salt and pepper to taste
1 oz. heavy cream
dash worchestershire sauce


I made a turkey yesterday, and was desperate for some turkey gravy. So i finally broke down and bought some xanthan gum. It was very expensive, but I've heard that a little goes a long way, so I went for it.

After doing a little reasearch on the internet, I read that it was hard to add to the gravy without clumping, also that you don't want to overuse it. The website recommended using a pepper shaker or a tea ball to sprinkle the xanthan gum powder over your sauce and stir while shaking.

I didn't have those, so I took a 1/4 teaspoonfull and my electric beaters in the other hand, and tapped the spoon against the beater to cause some of the powder to go in. Beating all the time, I did this with about a whole teaspoon into my turkey juice.

The result was a thicker gravy, but it was pretty clear, and didn't look like real gravy. So I added a little dollop of heavy cream and a drizzle of worcherstershire sauce. Voila! It looked and tasted like real gravy!

It was a thinner gravy, but thick enough for me. I'd read that if you overdo it with the xanthan gum it can get sort of slimy. But this was perfect. The only other thing I added was lots of salt and pepper to taste. It was so amazing! After a year on low carb, finally I have my gravy!!

i did this for the last two thanksgiving dinners and i let both my cats drink lots and lots of the gravy..
they gained weight!!
don't give this to your cats!!!
