Easy elegant sauce for meat
I had some frozen broth in the freezer, I think it was duck broth (home made). Might have been chicken. Anyway, I had pork chops to eat and they were a little dry. So I made this sauce:
1.5-2 cups of broth
.5 cup of white wine
salt and pepper
2-4 Tbl butter
Combine broth and wine and let it boil over high heat for 10 minutes. Until it reduces quite a lot, maybe by 50% at least. Then turn off the heat, add your butter until the sauce is glossy and thick. Salt and pepper to taste. This is absolutely wonderful, and very easy. Often time I make this after searing a pork chop so there's a little drippings and what not left in the pan and they just go into the sauce.
I try to make the sauce salty enough I don't have to add salt to the meat.
