Default Rabbit Stew

Just made this up today, been dying to try rabbit for some time and I saw it in the grocery store so i grabbed one. From there I just did a lot of improvising and came up with this:

Stew:
3 Cups Chicken Broth
1 Half a rabbit, cubed
1 Sausage, cubed
1 Cup Swiss Chards (stalks only)
1 Clove of garlic, diced
1 Piece of bacon
1 Bay Leaf
1/2 Cup Celery, diced
1/2 Can water chestnuts, diced
Salt & Pepper to taste

Marinade:
Olive Oil
Apple cider vinegar

I started off yesterday by de-boning the rabbit. I then took the meat and chopped it up into fairly small chunks. Then I took all the meat and put it in a marinade and left that to soak over night in the fridge.

Then early this morning I chopped the celery stalks, as well as the swiss chards. I chose only to use the stalks of the chards as the leaves wouldn't hold up to the long cooking time. Those I'll make something out of later. I put those aside for now.

Meanwhile I had the slow cooker warming up with about 3 cups of chicken stock. I cheat with stock and buy pre-made stock. It's just much easier. I then cut the sausage and bacon up into small chunks and fried them so that they were not fully cooked, but seared well. Those were then put into the slow cooker with a bay leaf.

Next is the rabbit, I also seared that well in the frying pan (with the bacon and sausage fat still in the pan). Once it was browned it went into the slow cooker as well.

At this point I had to head out so I put the celery and chards in, but if you're going to be around the house all day I recommend throwing them in half way through, so they retain their crispiness. The water chestnuts held up well and are still very crispy at the end.

From here, just set the slow cooker to low and leave it to simmer away. I let mine cook for 8 hours.


Here's the nutritional information:

Calories: 828
Protein: 82.98g
Fat: 41.47g
Carbs: 28.38g (23.74 net)
Fibre: 4.64g

Keep in mind, that's for the whole stew. You'll likely get 4-5 servings out of it.

Wow! I'd love to try rabbit but I doubt I could find it in the grocery store. Maybe they'd order it for me, they did order a goose once.

I only see it every now and then here. Probably was last year since I saw it last. It's not cheap either, I think it was $8 for a half a rabbit, which isn't that big.

I havent tried goose yet myself. I see them all the time around Xmas, but at $50 a bird (and a small one at that) I just cant justify the cost

No way! $50? Must've been some fancy place like Whole Foods?

You might try buying a frozen goose. I think I paid under $3 a pound for it. 7 or so pounds? That's how I bought mine. I think they had even marked it down to around $2 a pound when I picked it up.

I just love all the "other" meats like rabbit, quail, squab, turtle, goose, dove..........I guess I never met a meat I didn't like. Several years ago, we had a 4H project go horribly wrong and we ended up with about 27 rabbits. I had a butchering day and put those rabbits in my freezer. My kids didn't know the difference between it and chicken. That was a delicious year.

This wasnt a fancy grocery store. It was a Price Chopper, which usually has the best prices. They did eventually mark it down after Xmas was over, and I had planned on grabbing it come pay day, but someone beat me to it. Oh, and it was frozen....

I too love the "other" meats. I eat a lot of duck, especially now that I found a supplier that sells duck breasts almost all year round. They also have quail there, which I will cook time to time but only when they offer it deboned (other wise its too much work). Lately I've also been buying quail eggs and pickling them, they make good LC snacks.

I eat a lot of duck as well.....when we visit our daughter in vegas, we always go to the chinatown there. It has a market that sells these wonderful crispy skinned ducks with the heads on. I always get one for the trip home( of course, I always have plenty of paper towels and baby wipes because duck cooked that way is VERY juicy).....Look for those for a wonderful taste sensation.

I want to try rabbit but I think I'll go the $0.04 for an entire rabbit route.

DH's aunt used to make a wonderful rabbit stew with prunes! Not particularly low-carb, but really yummy. I wish I'd gotten her recipe. Now that you mention it, I haven't seen rabbit offered here for quite a while - it used to be available all the time. I suppose if there were a demand for it, it would be offered.

Off on a tangent, there isn't much liver in the meat cases any more either and no other offal -- I hope that doesn't go the way of the dodo!

no worries. We have tons of offal (and rabbit too , lol) in Cleveland-liver, gizzards, tripe, hearts, tongue, kidneys, homemade headcheese, you name it. I am grateful for the large variety of ethnic populations! I don't think I have seen sweetbreads though. Maybe all the fancy restaurants snap them up.
