I just use my favorite sweet pickle recipe and substitute splenda instead of sugar.
Sweet Pickles
1 TB salt
1 TB mixed pickling spices
1 tsp alum
1 c. cold water
cucumbers (cut into slices, about 1/4 inch)
Fill jars with cucumbers. Add ingredients to jar, each jar, if making more than one jar. I save peanut butter (plastic)jars for this recipe. Finish each jar with water. Set in a cool, dry place for 2 months. After 2 months, use only what you want at that time. Rinse very well. VERY well! Remove all seeds and seasons. Place back in the jar and add 1 1/2 c. sweetner and let stand for 24 hours at room temp, then replace in the refridge. For relish, I use the cucumbers than got too big and place them in the same jar. When I take them from the closet after 2 months, I process them in my food processor, then add the sweetner. It has kept for 6 months now in the refridge.
