spaghetti squash hashbrowns
ok, was looking for something different and had some leftover cooked spaghetti squash...so.........here goes:
1/2 cup spaghetti squash
1 egg
1 oz of chedder cheese
mix thoroughly, and drop by tablespoonfuls into a hot skillet with melted butter. Should get three or so. Flatten slightly with your spatula.
Cook a few minutes until nice & brown...flip 'em over and brown the other side.
I served these like they were baked potatoes...a little green onion, 2 slices of crumbled bacon, a bit of sour cream.
Was pretty good!!!
Not really for induction though...good for OWL. As I served them, they are about 8.6 net carbs for the recipe with my toppings (4 for squash, 0.6 for egg, 1 for cheese, 1 for bacon, 1 for sour cream, 1 for onions & butter).
You could also serve them with some LC ketchup or salsa which would put the carb count down a bit. Could also be served with a poached egg or some fried ham OR the one I'm dying to try: smoked salmon & hollandaise.
Hmmm will try this weekend!!!
