hi-sounds like you are figuring it out, maryh!

Had the last of the leftover chili tonight with a big salad and about 1/4 cup of DH's homemade granola with H&H. YUM!

Doing a fridge clean out to make room for all my thanksgiving food. Today I got 2 bags of mini peppers, 2 bags of organic baby carrots, 2 heads of celery and 2 bags of mini Persian cucumbers- lots of veggies for lots of snacks. Also 5 different kinds of cheese (pimento, cheddar, provolone, babybel, habanero pepper cheddar.) Needs stuff to serve people to snack on that's not chips and carbage. I find that veggies, cheese, olives and nuts are always good.

I'm going to be making some big meals before actual Thanksgiving too- like braised beef short ribs (I have 6 pounds defrosting!), curried chicken breasts, and some kind of grilled fish. I have 10 people before the actual holiday and 14 for the Thanksgiving dinner. I love company and have found that having lots and lots of LC food choices is helpful to me.

I'm going to be posting less during the holiday- but I'll try to pop in.

Hi,
I signed up back in August, but never really got the ball rolling with the program. Honestly, I had a stressful month and just couldn't make a commitment. I am probably choosing the worst time to try again with the holidays coming up, but I am going to give it a go. I look forward to chatting with you.

Hi Maddy-
this is a hard time to start, but you have to start sometime! There is never a PERFECT time.One idea is to maybe make a commitment to one or two LC meals a day and then fully commit after the holidays? It's really up to you and obviously I don't know you at all, but there is a really good website called REFUSE TO REGAIN and she has a terrific blog about the holidays. There is so much info and support here- please post and read and know we are here too.

I can vouch for what Eno said; to even include the one or two CM meals
can really help even if its not perfect, on plan.
Even 50% on plan helps to improve quality of life i discovered.

Best wishes with your Thanksgiving celebrations Eno.
That is some feat cooking for up to 14 people.
Your menu sounds really nice too; everyone will feel so much better with
less 'carbage'... That's a good description for it.
Would love to be a fly on the wall to see how everything is orchestrated.

Made garlic lemon Parmesan zucchini strips in the oven. A recipe i seen on Pinterest.
I liked it and will make it again.

Hi Mary- it's a job! But I have 2 ovens and I use both of them on Thanksgiving.

Tonight I'm making braised short ribs (all 6 lbs!) with pasta and a large salad, and veggies in the braising too. Then DH will grill the ribs.

Mary, how did the zuchinni taste? I love almost anything with lemon and parmesan!


My Thanksgiving will be very simple! Just my husband, my two sons, and me. We are having a simple meal. Turkey breast, ham, rice, rolls, gravy, creamed kale and candied yams. I have to decide which carbs I want. I really like stuffing but my husband doesn't like the way I make it. He likes his mother's version and I HATE her version. I was thinking of just doing mine anyway for me and the boys. We will be visiting family the Friday after. There will me more of the same foods I am sure.

How do you narrow your carb choice for your RM?

NewMaddy; There was only a hint of lemon- i really think it helped 'lift' the
Parmesan taste to something fresher.
I didn't really follow an exact recipe; just added a splash of lemon and its peel.
It looked really nice because it turned a golden brown colour.

What is it with men & their Mothers cooking?
I've heard stories like this before where absolutely nobody can shine a light
next to their Mother's version of recipes!
I suppose its cute in a way.

Sometimes i don't narrow my carb choice but i feel better if i do;
Lately; i want to do the whole 'Mediterranean' style of eating so i want
to include a wholegrain like quinoa as my carb, usually i like to have
starchy carbs like peas, sweetcorn, carrots too and also some kind of sweet
dessert,- sometimes just something like a yogurt then some dark chocolate
or something like this.

I do better if i stay away from those 'trouble-making' carbs that tend to
spin me out of control, sooner or later.

NewMaddy- maybe make your DH his mother's stuffing that you hate- and that way you won't even be tempted! I like everything I make, but I am not a stuffing fan. DH likes it crispy and wet- so I actually make 2 batches! One in the turkey, one in a sheet pan. But I also make coleslaw, broccoli and spinach casserole and a huge garlicky Caesar salad. And because I'm the cook I get first dibs on the turkey- and my favorite part is the wing. I usually skip dessert- I'd rather have a potato!

Making oven friend chicken tonight- the old Betty Crocker recipe- for my grandkids. Also making cauliflower tater tots! And salad. Tomorrow my mom (83) is coming- and we're going to have hot dogs and burgers on the grill. I'll make a huge salad, pasta salad for DH, baked beans, and maybe brussel sprouts.
Wednesday is a wild card- I'm letting my DH, mom and kids pick ANYTHING I don't have to cook!

RM tonight was pizza and chicken wings and salad- the choice of my DD and mom.

Even though i don't celebrate this holiday- i really feel i should Thank God so much more than i do -for all his goodness to me.

Made stuffed mushrooms as my cookery class; very basic but nice; smoked rasher/bacon, with cheese and onion and mushroom 'filling'.
Quite nice and i think it would be deemed OK for a CM as well.

hello!

Mary- those mushrooms sound great! Very CM appropriate too.

We have had lots of great food and lots of great RMs. CM breakfast and lunch have been easy too- just leftovers! I've had turkey, turkey salad, beef brisket, and chicken breasts in the last 3 days. We had bbq brisket for RM one day and then did a clean out of all the Thanksgiving leftovers another day- fun. Now the fridge is empty and the freezer is low too. I did get a turkey the day after thanksgiving for $2! So I will have turkey again in the next few months.
Today for RM dinner we are having chicken (rotisserie) and salad and veggies. My carb will be bread- DH will also have ice cream.

It is my favorite holiday for just that reason - I love giving "thanks" for the many blessings I've had in my life.

Love making stuffed mushrooms, that recipe sounds simple, easy and delish.

So deliberate! I'm going to copy this.

Eno-That is amazing you got a Turkey for $2. What a bargain!
I enjoy turkey most with either cranberry sauce & stuffing, or
A turkey, brie and cranberry toasted sandwich!!
or with coleslaw.

I made 'Parsnip' chips recently; i never eat parsnips but these were quite nice.
Thinly sliced and fried on a high heat for 1-2 minutes then sprinkled with black pepper.

Last week i went for a walk and ended up with chill-blains on my legs; But this week i got 'ski' gear clothing from the Aldi store & it is making a world of difference.
I think this is what they do in the Nordic Countries; they just
get all togged out for the bad weather and continue on regardless.

Love to get out in the day-light if i can at all because it gets so dark so quick these days.
Weather here is bright, cold and sunny at the moment- my favourite!
