Default Cauliflower Question

If you were to make a big batch of mashed cauliflower, could you freeze it?

I don't see why not. I'd freeze it in good freezer bags and reheat it in the bag in boiling water.

Default Freezing cauliflower

cmcole, I freeze my cauliflower casserole (which is essentially mashed cauliflower with some extras added) all the time and then reheat it in the microwave. It does just fine.

I will often use leftover cauliflower mash for breakfast - add some grated cheese and fry alongside bacon or sausage

This same question was asked recently on George Stella's website. The poster did a test and froze some. They turned soupy when thawed. Here is the link to the discussion:

Frozen vegetables don't always retain the same texture when frozen, but if you want to freeze cauliflower, here is a link on how to do it.

I freeze it without seasoning or dairy products, then add them when I heat the cauliflower up. Dairy can separate when frozen.
