For sure carbs generate water retention. Depends on the carbs, too, as some cause more, some cause less. The human body is 60+% water, and water levels change. When we weren't weighing ourselves all the time, these same water fluctuations occurred without us knowing about it. Certainly water is a different sort of weight from fat and other things, but it still affects what we see on the scales. I've tried endlessly to think about weight gain (from water) rationally and calmly, yet it always makes it mad, too. Yet I know what causes it. Sometimes nothing we can't identify a single thing to cause it, either, it just happens. The important thing is what is happening to the FAT we want to get rid of. Look at weight trends over a bit of time.
BTW, if I weigh 145 on Monday and 146 on Tuesday and yet nothing I ate would account for a one pound weight gain...I sure didn't eat 3500 or more excess calories so therefore I did NOT gain more fat. So it's just water fluctuation, and what I also know is that I will soon drop that pound again and more.
As someone said, weight goes up, weight goes down. I'll add that every time my weight shifts a bit, it doesn't always go down, no matter how consistent, careful, low carb I eat. Heck, I can go UP after fasting 24 hours!
The body is largely water, and water levels adjust all the time. That's a fact.
If you want to have "fun" with it, weigh yourself several times in one day and watch the changes! Once I was 2 lbs heavier at night than I was in the morning, yet the next day I was back down a bit more than I was the previous morning. Go figure!
