Thumbs up Cilantro Grilled Chicken Breast

Hi everyone! I found this chicken recipe at foodnetwork.com a few days ago and finally got around to trying it. It turned out wonderfully! Even my dad liked it, which is astonishing considering the fact that he hates onions and has a general dislike of cilantro. I was amazed that he even tried it.

Anyway, I thought I would share it with you. This recipe was featured on the Lo Carb and Lovin' It show on Food Network. Enjoy!!!

Cilantro is the BEST herb. I adore it. I went hog wild a few years back and got a ton at the supermarket. Hubby put his foot down when it started decorating scrambled eggs and appearing in sandwiches. LOL.

Sure make a homemade salsa taste even better!

Hi - I make a cilantro pesto that is awesome! I add just a little chili pepper to kick it up then make it with walnuts, pine nuts or pecans, and parmesan, along with the oil of course. It is great on meat!
