hi-
Mary- it must be cold there- stay warm! I love Aldi's too!

DH made the grandkids pancakes this am- everyone ate them. I had cottage cheese and nuts and coffee. I know that while the pancakes will taste good, it's only temporary and I'll feel bad later. Not worth going off plan for that.

Last night had meatballs with red sauce over cooked kale. DH and kids had it over pasta. My carb was garlic bread.

Tonight I think I'll end up with leftover meatballs and a big salad- if my kids go out to dinner. If they decide to stay home I'll probably grill salmon.

Hi-
last night that my kids are home. I'm making grilled Scottish salmon, pasta with pesto and peas, brussel sprouts and salad. I'm planning on bread or white wine for my carb.

Tomorrow we have a friend's open house before dinner, then I'm planning on going out for an easy yet QUIET dinner. Sunday we have plans for after dinner, but I am thinking of grilling burgers before we go out. Monday we're eating home, then I'm out on Tuesday with girlfriends. The only night we will be home after that is Wednesday.

My CM breakfasts and lunches have been pretty easy. Today I had leftover meatballs and kale for breakfast and chicken salad with mayo and celery for lunch. Tomorrow my lunch will be a salad out with my DD, before they leave.

I found a low carb Pancake recipe Eno.
Not sure if you'd consider it as an 'on plan' item though, might be nice for
a RM dessert!

Coconut and Almond Pancakes
(Serves 1)
Ingredients
• 30g ground almonds
• 20g desiccated coconut
• 2 eggs
• Almond milk
• 1 tsp. coconut oil for frying
Topping
• 2 Tbsp. full fat natural Greek Yogurt
• Fresh berries
• Chopped nuts
Method
1. Combine eggs, ground almonds, dedicated coconut powder into bowl and whisk together
2. Add in almond milk to desired consistency
3. Heat up coconut oil in frying pan
4. Pour in 1/2 pancake mixture and fry on a low/medium heat - flip and heat on the other side
5. To serve add yogurt, blueberries and flaked almonds.

that looks delish, Mary. I'd have it for RM because of the coconut and berries. Does look good!

Tonight's RM cleaned out the rest of the fridge. We had tuna sandwiches with salad and slaw. I had cucumber and onion on mine- I sliced a half of a seedless cucumber into long slices and had that on my sandwich. DH put his onto a huge salad with cottage cheese, parm, corn, and pasta too.

Tomorrow I'm going out to dinner with 3 girlfriends- I say yes to this a couple of times a year. Another group invited me to have pizza for lunch on Thursday- I said no to the pizza but yes to seeing them.

Wednesday RM (planned) will be salad, slaw, grilled beef sausage, bread for my carb.

finally feels like winter- may even have snow!
I'm having friends for dinner tonight. She's gluten free, so I'm making a grilled leg of lamb, smashed tiny potatoes (in the oven), a big green salad and a grilled eggplant.
No dessert. I thought about making apple sauce but forgot to buy apples!

hi-
the lamb was really good, but I have a lot left over. So tonight we're having lamb stew. It's a new recipe- the only strange thing is it adds in a can of coconut milk! It's the lamb, diced tomatoes, broth, the coconut milk and diced butternut squash. DH is really looking forward to it- he asked me to make some pasta or noodles for him. My carb - in addition to the squash- will be bread.

That lamb stew you describe Eno has many of the same ingredients as
the one i learned in the cookery class i attended.
It was a 'Moroccan' Lamb stew & a seasoning called 'Ras El Hanout' was added. It was very flavorful.

Here we woke up to a thick blanket of snow yesterday;
Love it how it transforms the countryside. No walking but will try to do at least 1/2 hour of some kind of indoor exercise.

Today i made 'devilled' eggs made with some turkey rasher, spring onion,
mayo and bit of mustard. Had it for a CM breakfast w/ green tea.
I'm going to make up a few extra to have on stand by also.

My plan for RM is to make a Meatball/Meatloaf type dish with vegetables for tonight. There will be carbs added to it.

Yesterday i made a spicy parsnip soup which had tomatoes added too;
i ate way too much of it though. Over-carbing these days but
for the next 2 weeks i plan to be much more careful.

I realise my happiness really depends on staying on plan properly.

Love lamb...in just about any form.

Have you tried making Scotch eggs ever Maryh? Love them, but they are very, very filling. I just make a recipe I like for sausage using plain ground pork, hardboil an egg, wrap sausage around and bake. Yummo.

We have snow here, it is stunning, so lovely. Time to chunk up our Fall pumpkin and toss it into the woods for the critters, think our 1/2 bag of cat food the cat won't eat will go out as well.

I have a new meatloaf recipe I love, though rm only as it does use a bit of breadcrumbs. Key to it's success seems to be using two meats - pork as well as beef.

It's Hanukkah, so tonight is my annual Latka fry. Latkas are a traditional potato pancake made for Hanukkah. I tell DH (who LOVES them) that I will make them ONCE a year, and tonight is the night. He's invited friends over, so I'll make a lot. The friends are pescatarians, so I'm making a salmon loaf and a large green salad too. I'm using chopped cooked cauliflower in the salmon loaf with shredded parm cheese instead of the breadcrumbs found in so many other recipes.

I haven't tried those Scotch eggs Patricia; i'm still a bit funny with meat
because of being a vegetarian in the past.
I used to live off breakfast cereals & beans and mashed potato & the like.
Absolutely love sausages however, although always feel guilty afterwards though just because i think pigs are cute, i feel the same way about lambs.
I think i'd be more likely to be a pescatarian too, like Eno's friends.

Your ever so good to think of leaving out food for critters... , that word is so funny to me, we don't use it here.
What kind do you have?
We would mostly have wild foxes, but rodents are never too far away
from our premises since my poor cat passed on, so we don't leave out any food.
Can't stand the thought of putting down rat poison however- too cruel.

Doing my best to keep afloat these winters days; starting with a walk,
then a low carb green smoothie, green tea, & Vitamin D & Omega 3 oil afterwards.
When i kick start like that, it really helps.
More or less 'on plan' but way over-carbing; today i must have had 500-900 calories worth of chocolate...Unacceptable really by any stretch of the imagination.
I think i need to stick to a monotonous routine as simple is sometimes much easier.

Hi Maryh,

I don't think I could survive as a vegetarian, I seem to crave protein (and not from beans, though I love those too...).

Critters I have seen on our property or just across the road in the woods opposite us- we have field mice, raccoons, opossums, ground hogs (aka woodchucks), deer, and many, many birds including wild turkeys. I have named the one opossum we trapped and released - Girard Young and cute...for a possum.

I am looking forward to this next year. Will be reactivating my blog (for reals), and actively back to adjusting diet and recipes, and exercising!

Latkas are done- big hit with DH. It's amazing how many he can eat!
Tonight we are having burgers, salad, and probably rice and brussel sprouts. Tomorrow DH brings dinner home. His choice. Wednesday will be chicken sausage patties with eggplant parm and salad. My carb will be a roll. DH will probably add on pasta too.
I'm thinking of making Cornish game hens for both Thursday and Friday- with cauliflower fried rice from Trader Joes, salad, and some kind of carb for me and DH.

I'm going to visit my DD and grandkids for a few weeks, so after this week I won't be posting for a while.

Hi-
plans have changed a bit for tonight. Yesterday a friend who does no sugar/no gluten called and invited us for steaks tonight- so we are going! Luckily I never took the Cornish game hens out of the freezer. The plan for tomorrow is grilled smoked beef sausage, salad, the cauliflower fried rice and a roll for my carb.
CM lunch will be tuna and salad. Saturday we're gone!!!
