this is delicious...

dip boneless chicken breasts in beaten egg and roll in pork skin crumbs, season with salt, pepper, and a little garlic powder. bake at 350 until just done. Remove from oven. generously sprinkle mozzarella cheese over the chicken and top with sauteed mushrooms, onions, and crumbled bacon pieces. return to oven until cheese is melted.

I made something surprisingly similar last week, except instead of rolling in pork rinds, I rolled in parmesean cheese and then pan fried it for a few minutes until brown and then baked. When it was done I topped with mushrooms, bacon and provelone cheese (because I love the creaminess of prov).
