Question Daikon for faux mashed potatos

I tried to make them by cutting the daikon into little cubes, then boiling for half an hour, drain the water and some cream, butter, and some Ketatos powder. Take stick blender and voila........................Daikon soup...........Its amazing how much water a daikon can suck up and hold. I even tried saving it with thicken thin but that didnt help much.

Any ideas on how to get rid of the excess water??

Hmmm, you could put the cooked pieces in a colander (draining bowl) and press with the bottom of another bowl that fits close to the size of the colander. This could squeeze out some water, and works for cauliflower 'potatoes' too. OR, you could put the cubes on a clean towel and fold towel over and press a few times. I've done both of these and I actually prefer the towel, but that's me

Try steaming them, not boiling. That might help a bit!
