I would just fry it up with red and green pepper strips. Yum!

Rosebud, I checked the sticky and was happy to see you are updating Karen's posts. Whatever happened to her? When I first got here she was still posting.

premade ones are a lifesaver here- my boyfriend was low glycemic, moderate carb, but is recently trying for ketosis. I usually make dinner, but at least 2-3 nights/week we don't eat together because of work/ gym- his go to dinner is to fry two with a bell pepper, toss a green salad down, and boom! dinner in about 10-15 minutes

any extra at week's end that need to be eaten up, become part of his weekend omelet. (We only eat breakfast on weekends).

Not Rosebud, but when I was in Vancouver, considered going to her restaurant. She is still executive chef at Fish House and a columnist for the Sun. However by her recipes in those columns and her photo and an interview, guessing she is no longer low carb. Her most recent column just found is an ode to making mashed potatoes. the last time checked, another column was all about cookies.

I love Kielbasa, when I was a child we made a special trip when "in town" to a Polish butcher shop for kielbasa made fresh, then to the German butcher for Sauerbrauten. Always fried the kielbasa in onions, green peppers, and cabbage...guess we were pretty LC and Paleo fermented foods.
