I haven't been around in far too long, but so glad a few of you liked my Mexican soup idea!
Missed you all.

Last night I was in my own, so I had 2 slices of flax bread with 2 over easy eggs, 2 oz Swiss and a half an avocado, sprinkled with trader Joe's everything but the bagel seasoning.

Snack was these freeze dried okra crisps in addicted to (also trader joe's)

Last night was cod with tomato, onions and fennel
Side salad with sf raspberry vinaigrette
Asparagus
Sauvigon blanc

Couple bites sf cheesecake and mixed berries for dessert (was big family get together)

Got a big bag of frozen wild caught (in USA) pollock fillets from Walmart. I never buy fish from there because it's all from China, but this looked AOK so I thought I'd try it. Made two pieces in air fryer, sprayed with a little olive oil and when it was cooked topped with some grass fed butter, salt and pepper. It was very good! And each piece wasn't vacuum sealed, which I find a giant PITA. Had it with a big chopped romaine salad with radishes, onions, olives, and homemade Russian dressing.

Last night and tonight: Sauteed tofu salad, the usual fixin's, avocado, shredded cheddar, Parm crisps, romaine and iceberg, bacon pieces with homemade Ranch. Robin we missed you!

Had some of my wild pollock again last night, topped with olive oil, lemon juice and spices; pickled vegetables on the side (sauerkraut, olives and a baby dill) and a few ounces of red wine.

I've been enjoying Robin120's
Roasted Brussels Sprouts and Bell Peppers Salad this week - yummy!!! I did not add garlic chicken and left out the splenda in the dressing of EVOO and sherry vinegar - which was what I used, then I made my Ranch with it, too.

Salads this week: Robin, where are you? I am relying heavily on your ideas lately!
Another one of your salads
tomato and fresh mozzarella salad with fresh basil. then i top with grilled shrimp (picked the shrimp twist up from a local restaurant). i dress with a balsamic and fresh sea salt.

Mviesprite- hugs!!!!! I'm so glad you are enjoying stuff I posted. Miss this place tons... I'm trying to come back here, have been hiding from life. I'm in a war with my insurance company to start my only chance to get pregnant. It's been just awful. So I have been really isolating myself.

Tonight's dinner is a suprise. My amazing hubs and a dear friend are on the job. Lucky me! I'm banished to the den with my puppy, while the guys make dinner.

Robin, nice to see you back, and I'm so sorry to hear about your struggles. That's heartbreaking.

Last night's dinner was cream of cauliflower soup that I made from packaged cauli crumbles. A few weeks ago, I found them for 30% off because they were about to expire, and I threw them in the freezer. They work just fine for faux fried rice and creamy soup.

I don't know if any other Canadians are following this thread, but it was President's Choice cauli crumbles. They have some carrot, onion and broccoli in them, too. Makes for pretty quick meals. The only catch with the soup is that it'll be a bit brownish-orange from the broccoli and carrots.

The soup sounds great.

Last night's surprise for me was...... A poke bowl! My friend made stirfried snap peas, carrots, onion and pepper.
Shirataki for me (cant believe he researched low carb noodles for me!), Gluten free pasta for the guys
Tuna
Seaweed salad

Omg, that was amazing- Sashimi is my favorite food, this was so thoughtful.

Oh, i also had vodka and fresca

Nawchem, that salad sounds delicious!

Kristine, I am making a cream soup based on your suggestions today! I am staying with my friend so all my cookbooks, and everything really is in storage - I am on my online LC "cookbook" full of recipes and ideas from here I do eat well!!

Tonight will be a simple salad with romaine, shrimp, hard cooked egg, tomato, shredded mozerella, cheese crisps, and homemade Ranch.
