Because I love(d) junk food, I had to make a sub for those stupid orange cheese crackers with PB .... so I've been making my own with thin sliced sharp cheddar - I break one slice in quarters and smear the thinnest smallest amount of PB on one and top it with a piece to make a "cracker" sandwich...I make 8 of these for a snack. It ended up being breakfast today.

An amended version of a recipe for spinach-feta-sausage frittata. Made my own breakfast sausage from plain ground pork. adjusted the amount of eggs used, left out the almond milk (??) called for, felt the heavy cream it also called for, would be enough. Made as a casserole I could divide into 6 squares..voila..breakfast for my dh and I for the next 3 days.
Too bad I can not handle avocados, they make my stomach ache and feel like crap for about 1 hour, after that I'm perfectly fine again. Same reaction to bananas, that took me forever to figure out way back when (20 years ago?)
This is what I had for breakfast today, I figured some protein would be good as I have a paddleboard race later this evening and will not be eating lunch. W.H.O's Heart Attack Breakfast below... they might be right, keep open ears and mind!

- Processed meat (bacon)
- Red Meat (rare steak)
- High Sodium (kimchi and seasoning)
- Egg Yolk
Hey, good Luck in the race today. I also can't eat bananas, every once in a while I think, wow that looks really good, but I get incredible heartburn from them, EVERY time, slow learner...avocado, I just plain don't like them... have a positive day, drop by sometime, ttyl
