Default "No-oatmeal" Paleo Porridge/Gluten Free

Heat in a small saucepan to just boiling:

3/4 cup of unsweetened vanilla almond milk OR if you are eating dairy - scant 3/4 cup of water with a splash of heavy cream and vanilla extract added

Put the following into a blender:

1/4 cup of raw walnuts
1/4 cup of unsweetened shredded coconut
1 Tbsp raw pumpkin seeds
1 Tbsp chia seeds
pinch of sea salt
optional (1/2 tsp cinnamon)

Pulse once or twice to chop up, then when liquid mixture is about boiling, turn on the blender, and slowly drizzle in the almond milk or water, until all is combined and it's smooth like the old cream of wheat hot cereal

Put in a cereal bowl and let sit for 5 minutes, then top with your favorite sweetener. I like brown sugar twin and Joseph's Sugar free Maple Syrup.

I enjoy this on cold mornings. I adapted this from the recipe found here:

Wow, that sounds so delicious. I'll be making that for sure. I miss my beloved steel cut oats and this will be my replacement.

I miss it too! I always loved oatmeal and preferred it for breakfast over eggs. It would still be a top choice. My grandkids spend every Friday night for me and often I cook steel cut oats for breakfast as both kids love oatmeal and won't eat eggs! I try to make just exactly enough for them to eat lest I finish the rest up!

Will have to try this but would need to add a big glob of butter. I don't do almond milk as I consider it a huge environmental blight. I wonder how coconut milk would be? I love it.

ooh, that sounds good- i have done various hot "cereals" using flax or coconut flour with almond milk or cashew milk- but love the addition of chia, and haven't tried doing both together. great idea! I think i might try it adding some cocoa, as well- as a kid, my favorite breakfast was oatmeal with the squeeze tube of chocolate (that was pre diabetes!).
I think i will throw cinnamon pumpkin seedz on top as well, for the crunch.

Yep the recipe is extremely flexible. Add butter - more cream or cream cheese - or different milks. I don't do coconut milk because I cannot stand the taste but if that floats your boat, do it

The only thing I find is the METHOD of using the blender to whizz the ingredients with the hot liquid really makes it the "right" creamy consistency.

Could also add some flax meal or psyllium husk to help thicken it MORE if you like it "stand the spoon up in it" thick

I was surprised at the yummy taste. The sf maple syrup really does it for me with the walnuts yummmmmmmm

And yes, you could do different toppers too - seeds or nuts or more shredded coconut as you desire - or different spices like cinnamon or nutmeg or cocoa as Robin stated - or even top with a nut or peanut butter - or small amounts of berries or sugar free jam if your plan allows.

One could even play with protein powders as an add-in as well with this. Though I usually have a couple eggs on the side for extra protein.
